    Hello, fellow Pacific North-westerner,
Loved your kombucha article in the most recent Wise Traditions.
I have been making a great kombucha using only rooibos and sugar for several years. The SCOBY is healthy and transfers well from batch to batch. My no-caffeine friends who are not fond of classical kombucha love the rooibos variety and come back for more.

      Hi Betty,
I’m so glad you like the article! That is great to hear that you’ve been making kombucha for so long with rooibos! I am always learning new things about the amazing versatility of the kombucha s.c.o.b.y.. Since I wrote that article I’ve also heard about great results using Earl Grey tea.
You know, the only island that I’ve ever been to in the Puget Sound is Orcas! Cheers to the Pacific Northwest!
      Best wishes,
      Dori
