Gluten-Free Whole Flour Mix
Makes 4 cups
I was introduced to this nutrient-dense blend of whole-grain gluten-free flours by Durga Fuller, of Portland’s The Cook Awakening. This blend is remarkable for several reasons. In my kitchen it’s primarily used to maintain my Gluten-Free Natural Levain Starter Culture. Additionally, it’s a great substitute for whole-wheat flour. Substitute it directly into your favorite recipes.
2 cups bean flour (red, white, garbanzo, fava, lentil or any combination of these)
1 cup brown rice flour
1 cup teff flour
In a large bowl combine bean flour, brown rice flour, and teff flour. Mix until thoroughly combined, about 2 minutes. Store tightly covered in the refrigerator.
